I also make a turkey meatloaf which, IMO, is way better than the traditional meatloaf. I believe its a Betty Crocker recipe (I can't remember it off the top of my head) but it only uses like a cup of tomato juice instead of all the ketchup in a regular meatloaf.

brown ground turkey. add sauteed onions and peppers, a jar of salsa, can of black beans, can on white kidney beans, bag of frozen corn, small can of plain tomato sauce. Add cumin powder and/or chili powder to taste. Simmer until corn is defrosted and everything is heated through. Serve over rice.

cook two packages of ramen noodles but put the seasoning in the meat instead of with the noodles. drain all the water and mix the noodles and the meat together. add one bag of mixed veggies.

Rachel Ray has a good recipe for chicken parm meatball subs. I am sure ground turkey would be just as good.
