What can I make with diced cooked chicken?

King Ranch Chicken

2 cans Rotel
2 cans Cream of Mushroom
I bag shredded Cheddar cheese
Bag or corn tortillas roughly torn.

Preheat oven to 350.

Cover a 13x9 dish with a layer of tortilla. Layer 1/2 the chicken. Mix one can of soup with Rotel and spoon over chicken. Top with half the cheese.

Repeat all layer and bake 30 minutes.

Pesto chicken pasta -

Cook a pound of whatever short cut pasta you like (I prefer raditorre [sp?] for this recipe) 

Mince a couple cloves of garlic, saute them in olive oil in a very large pan.

Add in the chicken until warmed through

Add in a tub of pesto (we use Buitoni) and melt that in with the chicken and garlic.

Once the pasta is cooked, add it to the chicken/pesto mixture. I also add about 3/4 of a ladle of the pasta water to help thin out the pesto.

Once it's all combined and the pasta is coated in the pesto, I add in some parmesean cheese.

It's delicious.

Ok...YUMMMMMM.  Thanks so much for all of the great ideas!  Now I have to decide on which one to make.  Good thing I have another batch of cooked, diced chicken in the freezer to use for another one of these later this week!
