Now that I am on this new diet kick I need new things to eat, that does not include butter or frying. I do grill a good bit and we try to have fish once a week. I need side dishes more than anything. I have picked up the wheat pasta to try it and have switched to brown rice.
any other ideas..

Turkey Tex Mex Meatloaf
Prep: 10 min
Cooking Time: 45-50 min @ 400 degrees
Serves 4-6
Ingredients
1 1/2 pounds ground skinless turkey
1 cup Fat Free Mild Chunky Salsa
1 Small onion, diced
1/2 cup Frozen Corn kernels
1/3 cup instant Mashed Potato Flakes
1 Egg White
2 Garlic Cloves, Minced
1 Teaspoon Dried Oregano
1/2 Teaspoon Salt
1/4 Teaspoon Ground Pepper
1. Prehead oven to 400 degrees.
2. Combine in a large bowl: turkey, 1/2 cup of the salsa, corn, potato flakes, egg white, oregano, salt and pepper. Mix up really well.
3. Transfer to meatloaf pan.
4. Spread the remaining salsa onver the top.
5. Bake until temerature registers 165 degrees, approx 45-50 minutes.
6. Let stand for approx 10 minutes.
7. Cut into 12 slices.
Approx for 2 slices -- 160 Cal, and 1 G Fat.
In general for low fat cooking:
I always use olive oil.
I never use the required amount of oil in recipes. I usually use a 1/4 of the oil called for, or none at all. I recently re-seasoned my pans, and that has added to my ability to cut down on oil, like when sauteing veggies.
In baked goods (quick breads, muffins), I substitute plain, fat free yogurt for oil. Tastes the same.
I use 1/2 whole wheat and 1/2 white flour in baked goods
Use low sodium, low fat chicken broth instead of water for rice

this is bad, but: I just feed myself these low fat meals. DH doesn't watch and DS needs as much fat as possible.
I often eat a can of lowfat soup poured over a baked potato. Filling and low points.
Or I stir fry brocolli slaw (raw, comes in a bag), pre-chopped onions and peppers, and mushrooms and add things like 1/4 cup of Thai Curry sauce from Trader Joe's OR Lite Asian Sesame sauce. Sometimes I'll add pre cooked chicken. I use points for a little oil or butter, and of course points for the sauce and chicken...but I don't count all those vegetables. Of course you'll be in the bathroom the next day...but that's a good thing when one is on WW.
Trader Joe's also makes pre made lentils that are lightly seasoned. Sounds gross, but they are really great and very low fat. And will also send you right to the bathroom.
My DH makes this great salmon dish and everyone likes it. He buys a certain kind of salmon (all I know it has no food coloring added and it has the skin on it...which he takes off). He cuts off any visable fat which usually is minmal. He presses about 3 - 4 garlic cloves in a large non-stick fry pan and adds chopped green onion (probably about 6 of them). Then then pours in some orange juice and lets that simmer for a few minutes (probably about 15. He then adds pieces of salmon (they are usually 3-4 inch squares) and poaches it until it is done. He is particular that it doesn't overcook. Take out the salmon and put in a covered bowl. He then makes a thickening by adding cornstarch and orangejuice to a shaker and then stirring that into the orange juice in the pan. Basically you stir until it is thickened. You can add orange segments at this time as well (although my DH doesn't like warm oranges so he never puts them in). We put a piece of salmon on top of brown rice (made before anything else is started) and then pour some sauce over all. He usually serves it with broccoli or asparagas and a salad.
