Reading Toddler's busy book and thought some of these might help you guys:
Get a basket and some balls and teach him to play basketball (which will be just putting the balls in the basket and probably taking them out) You can also play with stuffed animals
Large magnets and a cookie sheet
A coffee can filled with unpopped popcorn or buttons or whatever (i also used soda 2 liters and glued the lid on)
Put some colorful cereal thru the food processor and make colored "sand" (DS Still loves this and likes driving his cars through it on a cookie sheet with an edge to contain the mess)
Texture touch: Get a bunch of stuff from sandpaper to cotton balls and sticky tape and have him touch them and feel the differences (for safety they recommend gluing these things to coffee can lids or formula lids or something)
Use string tied to some toys, tape the other end to the highchair tray, he can toss them overboard and pull them back up (this i'm sure won't last super long but...)
Bowling - fill a 2 liter half or 1/4 full of water, (you can add food coloring too and sparkles and other "floaties" to make just a fun toy) have him knock them over (probably just with his body instead of a ball)
And of course the pudding/yogurt/jello painting. You can also make totally edible playdough for him to feel.

No problem! We're getting bored of the Christmas/Birthday toys in our house, thought you guys could use these too.
The other fun thing here is a box (shoe box, wipes container anything with a lid) and "surprises" inside. (Blocks, balls, little people..........the list is endless, yet the fun never stops)
