Okay now, all you butternut squash skeptics:

My idea wasn't THAT cockamamie, as it turns out, LOL.

A google search revealed that pumpkin and butternut squash are so closely related that they're pretty much interchangeable (I suppose I could have searched that first before posting, haha.) You can even  sub squash for pumpkin while making a pie.

So, that being said, I have a double batch of these in the oven right now:

I did muffins instead of a loaf, but same difference. They smell good and the batter tastes pretty much just like pumpkin loaf/muffin batter would taste. I'll have to give you the final verdict once the kids taste them; I'll have four kids and a mom friend over for a playdate in about 20 minutes so I'll have to let them be the final judge, LOL.

  • I've heard that sweet potatoes, butternut squash, acorn squash and pumpkins are pretty interchangable when it comes to making desserts (if you use the same spices).  Squash probably doesn't have as much flavor as pumpkin so your muffins might taste more of the spices you used.  Sounds good to me.
  • Good to know! I love butternut squash.

  • I've been a baker for a long time, and I have always used pumpkin, butternut squash and sweet potatoes interchangeably.

No one has ever commented on a difference.
