I have a friend coming over with her dd for dinner tomorrow. I was planning on making risotto and a salad. (Risotto is super easy to make in the crock-pot and my kids love their "cheesy rice.")
Any suggestions of what to serve with the risotto? I have some chicken sausages that I was thinking of adding to the risotto along with some asparagus (my kids and her dd like asparagus) to make a one-dish meal. Does that sound good or would you do the risotto as a side dish and make something else for an entree (some grilled chicken maybe, or chicken cutlets with a lemon sauce?)
Re: What to serve w/risotto?
We add turkey sausage or browned tofu.
Ditto, sometimes we do risotto as our main dish, for a light meal. You could always add peas to it...we make one with red wine, parmesan and peas.
this please

This, basically:

Instead of using dried onion flakes though I'll usually do a regular onion (and/or garlic or shallots) sauteed in a little olive on the stove, then put that in the crockpot and go from there.
If you want to put any veggies (spinach, peas, and asparagus are all good) put them in for the last few minutes just to warm them through.
