Bet you've never made brussel sprout pot pie

Ick! That's how I felt when Ethan asked me to make it. He wanted chicken pot pie, but no chicken and no veggies. We looked in the fridge and found that brussel sprouts were the best bet for pot pie. So, we made brussel sprout, onion, and new potato pot pie (no meat at all!). I'm scared to try it but he's psyched. Poor kid may be in for a rude awakening in 20 minutes or so.

ETA: we obviously have veggies, but no mixed veggies or the usual peas/carrots/green beans you'd usually put in pot pie. We've even done broccoli and cauliflower before!

  • Update: it was actually REALLY good. There were only 2 pieces left when we were done with it. I was afraid to try it myself, but once I saw all 3 kids were devouring it, I got brave and tried it :) I personally like brussel sprouts anyway, and didn't think the flavor was overly powerful in it. It tasted like pot pie, you know?

    Can you please come to my house and train dd to like veggies like that!! Wow, I'm impressed that you got them to eat it and enjoy it.

  • The veggies in there got so tender, you really couldn't taste them. My kids don't usually like brussel sprouts that much.
  • The word brussel sprout and the fact that it is mentioned in this post so many times makes me want to hurl.  hahaha
