Need help with a recipe, please...

Crockpot Chicken Fajitas


7 boned and skinned chicken breast halves -- cut in strips

2 onions ? sliced

2 green bell peppers -- cut in strips

2 red bell peppers -- cut in strips

2 jalapeno chile pepper ? chopped

4 cloves garlic ? minced

2 teaspoons chili powder

2 teaspoons ground cumin

2 teaspoons ground coriander

28 ounces tomatoes, canned

1/4 cup water

8 flour tortillas

 

Combine all ingredients in crockpot. Cover and cook on low for 8-10 hours.  Serve with salsa.


I'm in the process of making this, but I've got a few questions:

--I don't have any groud coriander.  Is there something else I can substitute for it or should I just leave it alone?

--should I drain the can of tomatoes before putting them in?

  • I am still getting into this cooking thing. I am not good at it but I try. I would just leave out the coriander. I don't know of a substitute.
    I would drain the tomatos but it wouldn't hurt if you didn't drain them. Either way would be fine or at least for my cooking it would be ok.

  • Coriander- Cilantro or Tumeric (probably can be skipped)
    You will need the juices in the tomatoes. Crock pots need a lot of liquid for cooking. Don't drain.
  • You could try using cilantro. 

    I would drain the tomatoes first, if the mixture looks like it needs some juice then I would add some in.  YOu can always put more moisture in but you can't really take it out. 

    PS: the recipe sounds fantastic!!!


  • I would say coriander could be let out.

    Don't drain the tomatoes (normally I would drain), but not for a crockpot or things that need some liquid.

  • terragon, dill or cilantro are all good subs for coriander.

  • You can either leave the coriander out, or add half that in dried  cilantro,  full amount in fresh.

    Leave the tomato liquid in, crockpots will use a ton of liquid.
