My older sister once told me that there is always a bit of moisure on them after washing. She taught me that by putting them back in the warm oven after washing, it'll evaporate the water and will not rust. I've got nothing in common with this woman, but she knows her baking and I haven't had a pan rust since.
Because you buy crappy pans. Get them at Crate and Barrel, William Sonoma or calphalon and they will last forever. I have had a cookie sheet for 12 years and it is still in great shape, despite heavy use. I also use ceramic pans for bread.

Not true. I have Calphalon pans that have rusted. You assume her pans "suck" because they may or may not be expensive. I don't think cost has much to do with it.
