I made PW's red velvet cake into cupcakes the other weekend and they were awesome! I think I am going to bring Chocolate Mousse with coffee liquor to a friends' house this weekend. I think it'll look really nice in my trifle dish.
what about maybe something simple like chocolate covered pretzel sticks or something, I think a nestie posted around christmas time a recipe that involved caramel, it sounded YUMMY, but I can't find baking caramel in my grocery store...
I made these last weekend for a party. They are SO yummy and cute.
Mini Chocolate Chip Cookie Cheesecakes
Divide a tube of Pilsbury chocolate chip cookie dough evenly among 24 lined muffin cups. (You could make homemade dough, too, but I was short on time and this was the perfect amount.)
Bake at 325 F for about 8-10 minutes or until the dough has just evenly spread out to fill the muffin pan. You don't want it complete done because you will be baking them again with the next cheesecake layer.
Beat together 2 (8 oz) packages of cream cheese, 1 cup (8 oz) sweetened condensed milk, 2 eggs, and 2 tsp vanilla extract until it is perfectly smooth. Fill the muffin cups until it is just about to the top. (I used two scoops with my cookie scoop and it was perfect.)
Bake at 325 F for another 15 minutes. The cheesecakes will firm up a bit more after you take them out.
Let them cool completely and then pipe on some fresh whipped cream or some whipped chocolate ganache and sprinkle with mini chocolate chips. (I did the whipped cream, but I plan to do the ganache next time. I think that will be extra good!)
