I haven't had my class yet so for me the hardest thing for the past week has been not knowing what/how much I should eat. I hope that after tomorrow I'll feel better about that!
I have a sugar free pudding for a snack today. I will probably have to go get something else this afternoon.

The hardest thing for me has been giving up dessert. I still have a bit now and then b/c the book says you can. Also sometimes just not feeling full is frustrating! Easiest thing has been testing the sugar.
Snacks: humus and carrots or mini chocolate chips (only a few) with almonds
To be honest, i haven't really found this to be as difficult as I thought it would be. For me, the hardest part has been timing my testing. I get distracted easily at work, and I'm afraid I'll forget to test at 2 hours.
For snacks, I loaded up on all kinds of options. Cheese or peanut butter with fruit or crackers, cottage doubles with pineapple, SF dark chocolate pudding, hummus and vegetables, organic applesauce and nuts, etc.

Let's see the hardest thing for me has been giving up potatoes & juices! Potatoes have always been my favorite side dish, no matter what kind. And juices & caffeine free drinks has been another thing of mine, I drank them every day. I still crave both things from time to time but I've had some pretty good self control. The easiest thing has been not eating sweets bc I stopped having a sweet tooth before I got preg so I haven't really craved anything sweet.
I like to snack on almonds & cashews. Blue Diamond has a variety of flavored almonds that are low in carbs. The side of the can also has measurements on it so it's super easy to keep track of how much you eat.

Easiest thing... hmm... knowing that I'm doing this for the BEST reward ever!!! :-) Cheesy, I know- but that's the only easy thing!

Question of the Day: What has been the hardest thing so far about having GD? What has been the easiest? Hardest thing this week is just not knowing what the heck I'm doing! Hopefully I'll get an appt with my nutritionist early next week. Going through the cupboards last night reading labels DH and I realized that there will be A LOT of changes to (at least my) diet. We have bread and potatoes with almost every dinner.
Menu: We all have to have snacks right? So... what are you snacking on today? Today I've got an Apple w/peanut butter for this morning and then a yogurt for later (not my best choice but it's the last one and DH won't eat it).

First, I realize I forgot to add my age, so if you want to update me, I am 27.
Anyway, here go my answers!
Question of the Day: What has been the hardest thing so far about having GD? What has been the easiest? The hardest thing so far about GD is giving up all of my favorite sweets. I mean, I know there are some sweets we can have but in moderation, but I miss the freedom to choose when and how much cake I want, lol. Also, the diet and testing is hard in the sense of days when I have to run errands and I am not at home. I have to pack snacks and my testing supplies in the car and do it on the run sometimes. The easiest thing for me, so far, is that I am just diet-controlled because my numbers are good.
Menu: We all have to have snacks right? So... what are you snacking on today? Not sure what I will decide to snack on today, but here are some of my favorites: Weight Watchers chocolate chip cookies, Nilla Wafers, snack size candy bars like Snickers, a banana, graham crackers, sugar free pudding... and 2 of my ABSOLUTE FAVES... Weight Watchers ice cream candy bars (taste just like a Snickers ice cream bar!) and Itty Bits ice cream servings (like Dippin Dots but from the grocery store... some only have 13g carbs!)

QOD: So far, the hardest thing about this GD diagnosis eating on a schedule! I work nights, and my eating schedule has always been out of whack. I've also never been a three meal a day eater - I'm much more of a grazer.
The easiest has been the testing. Needles don't bother me one bit, and I'm used to using the equipment ( I'm a nurse).
Snacks: This one may sound a bit weird, but it is surprisingly good and super low carb: Cucumber slices topped with slices of sharp cheddar cheese. It almost makes me forget that I can't eat crackers
I have my first dietician appointment today...I hope she doesn't yell at me, I'm trying to be good.

QOD: The hardest thing for me so far is cutting back the carbs espeacially the sweets and juice but it's getting alot better with time. This has really helped me with learning and understanding portion control.
The easiest thing for me so far is the sugar free jello I love it.
Snack: snack choice for me is 7 crackers and peanut butter or peanuts with some semi sweet choc morsels satisfies the choc craving and it's within the carb limits.

What has been the easiest? The easiest part has been coming to terms with this GD. Knowing I have to do all of this to have a healthy baby.
Menu: We all have to have snacks right? So... what are you snacking on today? Today I had peanut butter and crackers. I felt like I needed a little something so I had almonds as a filler between snack and dinner.
The hardest part was just the first week. I was upset, I didn't know what I could eat, and I was scared of complications. But I've learned a lot since then, and now feel much better about the whole thing.
The easiest part now is probably testing - but only because I lost my cap that covers the needle and had to wait a week for the replacement to come in the mail. During that week I tested w/the straight needle - so now having the cap feels like a breeze!
My snacks tend to be rather large, since I was losing weight on this diet, and I'm first tri - so I still need to gain weight. I'll have a banana, 4 multigrain crackers w/peanut butter, and a shake (similiar to ensure - but for diabetics).
