One website that I've found says to not count the following as carbs:
2 Tbsp peanut butter
6 almonds or 10 small peanuts
1 teaspoon oil or margarine
2 Tbsp low calorie salad dressing
1Tbsp regular salad dressing
1/2 cup cooked vegetables or 1 cup raw vegetables (count only if you have more than 2 servings per meal)
Is this correct? I haven't had my class yet.

Yup also completely 'free' foods are
1/2 c raw cabbage
1 piece hard candy
1/4 carrots, cauliflower, green beans cooked
1/2 cranberries
1/2 cucumber
Gum any amount
Jam or jelly that is no sugar added 2tsp
Salad greens any amount
cream cheese 1 TB or 1/2 oz
creamers non dairy liquid or power
Mayo 1 T
1T sour cream
Whipped topping 2 TB
BBQ sace 2tsp
Ketchup 1 T
Honey mustard 1T
Horeradish mustard and lemon juice any amount
Parm cheese 1 T
Pickles 2 slices
Salsa 1/4 cup
Soy sauce 1 T
Yogurt 2 T
ANy amount:
Drinks/Mixes: bouillon, broth, carbonated or mineral water, club soda,
cocoa powder unsweet, tea unsweet
Seasoning: flavors like vanilla etc, garlic, herbs, nonstick cooking spray, pimento, hot pepper sauce, cooking wine, worcestershire

Your welcome I remember how frustrating it was before my appt. Srsly ask anything I will look it up for you. Also obviously when I wrote 1/2 or 1/4 i forgot cup duh! Sorry! Hope it all made sense still!
