snacks i eat almonds and semi sweet morsels (carb allowance of 15 g = 6 hershey kisses and those little baking ones are smaller so I stick a few in with the almonds and it kills my sweet craving). Apple with peanut butter, humus and baby carrots, 6 corn chips and salsa, a banana, smoothie made with blueberries two spoonfuls of yogurt and a splash of milk, rice cakes with pb and no sugar added jelly, cucumbers and dip, baby bell cheese or string cheese.
For dinners without meat I have made calzones. the carb allowance says you can have 1/4 of a 12 inch pizza and when I make the calzones I use 1/4 of the dough (making four) I use whole wheat dough and ricotta cheese parm cheese and spinach and turkey pepperoni. (i can give you the exact recipe if you want). Also I have made stuffed peppers now that has meat too but it's kinda in a different form and the pepper has so much in it that it covers the food groups and makes you feel full (again i can give you that recipe if you want).
I agree I hate the hard boiled eggs after awhile. No reason you can't make them deviled either. Also made one today where you butter one side of a whole wheat bread slice and cut a hole in the middle.You crack the egg into the whole and when it is firm flip it until the egg is done and season with s and p. it was okay, breakfast is hard for me i miss cereal.
Thanks for the tip on almonds with semi sweet morsels I am def gonna try that because the biggest challenge for me thus far is the sweet cravings, and I am def missing my cereal for breakfast too getting real sick of eggs every morning.
Quaker makes a low sugar oatmeal that comes in packets that are super easy & quick to make & are good. Blue Diamond has honey dry roasted almonds that are really good & help with sweet cravings too!!
