do you all actually eat veggies without butter or olive oil?
yes, i do. we all (my family, DH, me) eat steamed or blanched veggies a lot without butter or oil or anything other than a little ground pepper.
eta: and my fav are carrots and red peppers...they are delicious as is. oh and i don't consider herbs and garlic, salt and pepper as "condiments" (as some said before).

As this was a nurse, maybe she was coming from a real nutritional place. The fact that you are talking broccoli makes me think...Broccoli, spinach, anything in the cabbage family, edamame, etc., are all really high in calcium. However, calcium is a fat-soluble nutrient. There is a whole area of nutritional goodness that you don't benefit from when you eat them without some kind of fat.

It just struck me as odd. Trust me, I'm not starving her! This kid can eat. I was kind of irritated by the diet comment.

I'm not militant about it (if I cook something in butter/oil she gets it too), but if she'll eat plain veggies, why add cheese. Same for water/juice. If she happily drinks water, why give her juice all the time?

I don't think she is, I think she's saying that it's insane that this woman thinks veggies served as is is "diet food". fats are very important in a healthy diet, but i think there is obvious overuse of these things in out (american) society. and i really hate the "everything is good in moderation"....eating a cup a lard once a week probably isn't....and neither is crack.

Okay, I'm pretty sure giving a kid a cup of lard with breakfast wouldn't qualify as "moderation." But using some to make a pie crust, of which your kid has a little wedge? Nothing wrong with that.
And why do we have to keep hauling out the crack? Juice isn't crack. Cookies aren't crack. Buttered lima beans aren't crack.

I do it on the same cookie sheet with crash hot potatoes. Yum.
