get some nice bone-in chops, thick is fine. dip in egg and breadcrumbs. fry quickly both sides in pan till browned.
put in oven in a pan with an inch or so of beef or chicken broth at the bottom of the pan (like a 1/4 inch covering the bottom of the chops). put a nice pad of butter on each chop. cook till done (too lazy to get up and get the degree and time of cooking).
My mother made these her whole life and they are sinful and good.
Re: NPR: Anyone have a *really* good pork chop or pork loin recipe?
Xbrooklyn had one. I don't remember where she got it from though.
Anyone?
