We have to take a class on the 19th before we can schedule the baptism. My girls were born in October so I'm getting really antsy to have it already! If we scheduled it for Jan. 31st would that not be enough notice for people? (many godparents will need to travel and we haven't told anyone yet that they are)

At least in our church (Catholic)... the Godparents also have to take the class. Have you talked to your church coordinator yet about requirements, etc? That's probably the first thing to do. I do think if you have out of town guests, the 31st is a little too soon for them. If everyone's local, then you're probably okay.
We picked our godparents and let them decide when they could make it out here for a weekend. (They live several states away.) We also did this a couple of months before Charles was even born so that we'd have plenty of time to let everyone know, make travel plans, etc. It was also during the holiday season, so that made it more difficult, too.
