tomatoes, cucumbers, scallions, green/yellow/orange/red bell peppers, craisins, pieces of chopped apple or pears, bean sprouts, walnuts or pecans, corn nibblets, water cress, chopped parsley, onions, zucchini, brocolli or cauliflower florets, shredded carrots, any type of bean: garbanzo, pinto, pink, black, etc..
I have been making a huge salad most nights to go with my dinner. I use organic romaine lettuce, shredded carrotts, bell pepper (yellow, usually) and two tomatoes (I love tomatoes). For a little crunch and extra protein, I add some roasted/unsalted pumpkin seeds. I often throw a handful of chicken on top and make that my supper.
You could also add beans, a little low fat shredded cheese, sunflower seeds, cucumbers, sprouts or red cabbage.

Really, though, my favorite salad is spinach, sliced pears, shaved Pecorino Romano cheese (which can be optional), and balsamic vinaigrette. Another favorite is arugula, sliced fennel, with lemon juice, a drop of extra-virgin olive oil, and freshly ground pepper.
Mostly, though, when I make salads, it's whatever's in the fridge, often romaine lettuce, spinach, celery, carrots, cucumber, red bell pepper, and broccoli. I add grilled chicken, grilled salmon, canned tuna, browned tofu, or beans if I'm making it a meal.

Remember a salad is not always considered a diet food. It really depends on what you place on top and the portion that you use as well. Dressing plays a huge part as well.
There are salads on some restaurant menus that top over 1000 calories alone!!
Try to put a color from every category in your salad and you have yourself a great meal.
Olives, baby pickles and avacados are a few of my faves. ? A great salad idea is spinach, strawberries and fat free balsamic vinaigrette, you can add a few nuts of your choice too. ?Its is so good!

Forgot to add: a sprinkle of hard cheese like gargonzola or sharp cheddar (not too much as it's fatty).

I love sunflower seeds on a salad. Ridiculous amounts of them.
Dried cranberries, feta and walnuts are another fave.
Steak (filet is my fav)
Grilled Chicken
Grilled Shrimp
Grilled Salmon
Diced Ham
Slivered almonds or walnuts or cashews (huge fan of all nuts)
Sesame seeds
Strawberries
Dried Cranberries
Rasins
Cucumbers
Mandarin Oranges
Blueberries
Obviously...I don't put all those things on a single salad...but I like to mix and match from that list.
Gorgonzola Cheese! (maybe not so diet friendly, but YUM!)
Goat Cheese is a yummy healthier substitute for a raw veggie dip.
