I know that sounds weird, but we have done it before and it is really good beef. There is a local farm who we have been in contact with about getting a side of beef from. We just don't need an entire side...we got a 1/4 last time and it took about a year for us to go through all of it. It was really, really good meat though. We could definitely tell a difference in the quality. Anyway, here is the info from the farmer if anyone is interested.
***The side of beef is # 982-A. It weighs 250 lbs., (hanging weight). The processing is 50 cents/lb, or $125.00. The beef is $2.65/lb, or $662.50. It is an excellent, well finished animal. See particulars below:

We have some sides of natural, grass fed beef available, today, December 15, 2009.
They weigh approximately 200 lbs each & cost $2.65/lb. for the beef,
and $0.50/lb. for the processing. (That would be $630.00 if the side weighed exactly 200 lbs.). If this seems like it's cheaper than you thought, it's because we are doing our best to keep this in reach of everyone.
Also, the weight is based on the hanging weight of your particular side of beef. Depending on how you have it cut there will be a shrink from the hanging weight of about 33%. Some more, some less.
The beef is simply delicious.
The beef is good for you. It has the good fats in it instead of the bad fats produced by grain feeding. And we use no hormones, pesticides, herbicides, chemical fertilizers nor do we
feed antibiotics. We use NO GRAIN.

I am pretty sure I would want to do this!! It would be nice not to have to worry about buying beef! How much do you think we would get by splitting it in thirds? Do you think it would last me a year??
hey, I talked to Robert and we just don't have the room for it right now... maybe next year - our plan is to get a garage refridgerater/freezer this year
