What "goes" with fish?

We're trying to eat more fish and we're having fish fillets for dinner. What are good side dishes?

I actually love to cook salmon in a foil packet. I brush it lightly with olive oil, then put lemon pepper Mrs. Dash on it. Then I slice some carrots and zucchini (both quite thin) and sometimes throw in snow peas or green beans. Then I fold it up, put the packet on a cookie sheet, and bake at 375 for about 15-20 min depending on how done you like the salmon. It is so delicious!!!

With salmon I LOVE a salad with spring mix lettuce, apples or pears, red onions, and pecans or walnuts.  roasted sweet potatoes are yummy, too.
