What's your favorite Holiday cookie?

I'm doing a cookie exchange and all other attendees are making cookies I'd typically make (spritz, fudge, gingerbread, peanut butter blossoms).  The only one not taken that I can think of is sugar cookies, and I'm not rolling, frosting and sprinkling.  I did that last year and it's too much work for me this year!

Inspire me, please!  :)

  • I love the no-bake chocolate/peanut butter ones with oats.  It's fairly easy and they are delicious.  There are recipes everywhere for them too.
  • I love shortbread, but that's a lot of work.  I also really like those chocolate no-bake cookies. DHs family calls them yukky cookies. Not very festive, but yummy.
