Oreo Truffles (I personally like to dip these in white chocolate.  These are also good to make with nutter butter cookies, too if you like peanut butter.)

Peanut Butter Truffles (aka Buckeyes to some people)

Mix together and then roll into balls:

1 1/2 cups peanut butter 1 cup butter, softened 1/2 teaspoon vanilla extract 6 cups confectioners' sugar

I then put them on a parchment lined cookie sheet and into the freezer until they're hard, and then dip in melted chocolate chips.  Refrigerate so the the chocolate hardens.
