I am obsessed with Alton Brown's recipe. You could find it on foodnetwork.com (sidenote, I substitute the cheese mixture for 1/2 cheddar and 1/2 pepperjack). So yummy.
box of macaroni, 1 1/2 bags shredded cheddar cheese, some milk, and butter.
make the macaroni, put it in a casserole dish. use about half a stick of butter, cut it up and put on top of the mac. pour all cheese on top. pour some milk, just about 1/4 cup, on top. mix it all together. put in oven 350 degrees for 20-25 minutes.
8 oz of elbows - cooked melt in 3 oz of velvetta in a bowl (that you can put in the oven, like corning ware) mix 8 oz of sour cream 8 oz of cottage cheese 4 oz of sharp cheddar 1 egg then mix in the elbows with velvetta top with (yes, yet another) 4 oz of cheddar bake 45 min
this is a huge batch - you can cut it to what you need!

YUM! They all sound good! I never thought about using Velveeta. That would def. make it creamy.
