I was working on my Menu posts etc. and I dont' have a lot on here. What is everyone having this week?
So far:
Spaghetti ( I made it last night and have atleast one more nights worth of it)
Porkchops (maybe even Mango chutney and rice with it)
Southewest Eggrolls
Chicken Enchiladas

Meatloaf and roasted red potatoes with rosemary
Chicken (with skin and bones) seaonsed with 35 spice combo and saffron rice
ETA: I might do my asparagus noodle cassarole if I can find asparagus that is not $3.99 a lb
I made broccoli cheddar soup. So far that's it...
Southwest egg rolls sound really good!
Tonight is pulled chicken bbq sandwiches.
I have no idea for the rest of the week. I know it won't be turkey. I'm sick of turkey.....
I ran across the recipe for Chili's SW egg rolls and I'm so excited. That is by far my favorite food chain item. I'm going to try it first deep frying like it says and then if it comes out right I'm going to try and make a lighter healthier version so I can have them more often!! LOL

Turkey Soup (with homemade broth from Thanksgiving's turkey)

And we are probably getting sandwhiches one night, too...
Tonight: Left over lasagna
Tomorrow: Unsure....taking FIL out for his birthday and visiting his new assist living appt.
Wednesday: Steak and mashed potatos
Thursday: Should be take out night but sine we are most likely eating out tomorrow I am going to keep it simple with sandwhiches
Friday: Taco Soup
Pork Chops and cous cous
Tomato Soup and grilled cheese
Tortilla Soup
Baked Potato soup
Ham and homemade mac n cheese

I made entirely too much Thanksgiving food.
So one night I'll probably make shepherds pie to use up the mashed potatoes.
Another night I might do some kind of turkey tetrazzini or turkey pot pie.
I know Friday night we're going out for DH's work Christmas Party to the Japanese Steak House (Fire & Sticks, buckin) and I'm super excited about that because I don't have to cook AND it's free!
