After taking care of 2 sick kids all week the boys are finally feeling better. Now DH and I are sick I need a good soup recipe to soothe our sore throats!
2 bags of Reams Frozen Egg Noodles (this makes it YUMMY!)
Carrots and Peas (I use fresh carrots and frozen sweet peas)
2-3 boxes of chicken broth
Chicken Breasts (or whatever kind of chicken you use. I vary the amount each time I make it, but 2 breasts would be perfect.)
Sautee one small chopped onion in the butter. Add diced chicken and stir until cooked. Add chicken broth and bring to boil. Add frozen noodles. Noodles usually take 15-20 minutes. After about 15 minutes, I add the carrots and peas. Salt and Pepper to taste and I also add yellow food coloring to give it a rich color.
This soup is awesome! I have rec'd so many compliments on it and everyon always wants the recipe. YUM!
Tomato Bisque
3/4 cup chopped onion
2/3 cup butter
3/4 tsp dill seed
1 tsp dill weed
1 tsp oregano
1/4 cup flour
4 cups stewed tomatoes
3 cups chicken stock
1 1/2 tsp salt
1/2 tsp white pepper
1/4 cup chopped parsley
1/4 cup honey
1 cup cream
1/2 cup half and half
Fennel (optional)
Saut? in butter- onions, dill seed, dill weed and oregano. Add flour, stir for 2 minutes. Add stewed tomatoes and chicken stock stirring in gradually. Add salt and white pepper, bring to a gentle boil, reduce heat, simmer for 15 minutes.
Add parsley, honey, cream, and half and half. Heat through.
Add fennel for extra flavor if you want, but grate or chop finely.

I was on a liquid diet for a month and lived on this butternut squash soup. Super easy to make too.
