I want to make a potato soup. One that's more on the side of extra cheesy? I can find tons of recipes online, but I want one that I know someone loves.
I just made mine tonight and the girls and I inhaled it. (DH isn't home.) Anyway, easiest thing ever. (I usually double the recipe and we have it for lunches and whatnot for the next few days.)
Ingredients: 3 large potatoes cut into tiny cubes (like 1cm sq), half a package of bacon, 1/2-1/4 small yellow onion minced, 1 cup of shredded carrots, 1 can of chicken broth, dill (maybe 1 tsp), lawry salt (maybe 1 tsp), 1-2 cups shredded cheese, 1 cup of milk, 1-2 Tbsp flour (optional)
Directions: Brown bacon in bottom of soup pot. Take it out and blot it, crumble. Add chicken broth, potatoes, onions, carrots, bacon, dill and lawry salt back in. Bring to a boil and simmer for 25-30 minutes (until potatoes are completely cooked and soft). Add milk and cheese and stir until cheese is melted (about 5 minutes if that). If soup isn't thick enough, dissolve flour in 1/2 cup of cold water and add to thicken. Serve with extra shredded cheese and bacon on top.
Totally easy and really yummy. I usually serve it with the cheddar biscuits that are on the side of the bisquik box.
1 large bag of hashbrown potatoes (no onions or peppers in it though)
1 "brick" of cream cheese
tablespoon of butter
Saute onions in butter. Add chicken broth and bring to a boil. Add hashbrowns and mash with a hand masher a bit. Toss in the "brick" of cream cheese and stir until melted. Serve as is or add shredded cheese, bacon and green onions to the top! It's a hit!
