I am planning on breastfeeding so we are planning on keeping the Beetle in our room in a co-sleeper for a few months.
After that he/she will go to their own crib. From what I understand, you're not supposed to use the comforter/quilt or a bumper. So what DO I need for crib bedding? Just sheets?
Also - it says not to use a bumper once they can roll over and move around. But isn't that when you want to use one so they don't bump their heads on the rails??

Yes that is correct. You are not suppose to use a comforter/quilt/bumper. They can cause a higher risk in SIDS (Sudden Infant Death Syndrome).
You can use the comforter/quilt for your baby, just keep it away from their head. This won't allow them to suffocate under the blanket. Or I have seen sleeping clothes for your baby.
As for the bumper it is another SIDS risk. I think the main reason is when they are big enough they can use the bumper to climb out of the crib. Not a good thing. Also, I have heard of breathable bumpers which will allow more air flow to your baby, which could work. I haven't looked into them. But I have heard something about them.
The SIDS risk with the bumper is that the baby can roll against it and wedge their face up against it. They are pretty solid. There is an additional risk when they get older that they can climb on that and get a leg over the edge of the crib and fall.

I would start with 3-4 waterproof mattress pads and the same number of sheets and yep, that's all you need for quite awhile.
When DS was 18 months we put the bumper in because he was getting his arms and leg's stuck between the bars, when he was smaller he could easily pull them back out but at this pointe he started getting stuck. Now at 22 months we had to remove the bumper because he used it as leverage to climb out of his crib. All in all for 4 months I think we could have gone with out it. We also just started using his comforter and he actually sleeps on top of it just to soften up his bed a little since his mattress is about as hard as a sheet of wood since we bought the highest recommended mattress at the time the colgate classic. We've never really had a problem with him bumping his head on the rails and we have an iron crib, he nudges right up against the bars and sleeps just fine like that.
