What's the freezing secret to Fly's Enchiladas?

I'm too lazy to go find the post. Somebody said to do something (or not do somethin) to make Fly's Enchiladas more freezer friendly. I'm getting the stuff to make them as I start freezing meals this week. I think it was to leave off the sauce until you make it? Do you think I could freeze the sauce in a baggie on top so it can all stay together?

  • i've never frozen those before... but i imagine you could freeze them in the tortillas?? just fill them with the filling and roll them. then put them on a cookie sheet individually and freeze. then you could pull out however many enchiladas you wanted to fix and just top with the sauce & cheese... i think! i'm still a freezing amateur.

  • I think I'll try making them both ways (with and without sauce) and see how it turns out. I already bought a ton of cheese so I'll have to make at least one of them completely fixed up to freeze and one to make fresh.

    This would even be too much for my dh....he claims he doesn't know how to work the oven! UGH!
