DH's grandmother is Ruth and we are very close. I would love to honor her, but I'm afraid that if we use Elizabeth, Ruth sounds strange with it. 

Does Elizabeth Ruth sound weird?

I don't think the 2 "th" endings sound that weird. I wouldn't worry too much about it if you really want to honor her. I do like Caroline Ruth better though

I don't think it sounds weird at all, plus you're honoring someone you're close to which makes it all the better!

And don't forget, the full name hardly ever gets said all together anyways!

the two "th" sounds at the end would bug me. I am really weird about that sort of thing though. maybe it's just me.

I think it sounds fine.  Just don't call her Beth, because Beth Ruth sounds AWFUL!
