I've decided to just make some casseroles for Maile's birthday party. We're in Kentucky--casserole is a staple here!
My MIL is making a chicken pot pie and I'm making broccoli cheese casserole and baked mac n cheese. I need at least another main dish. It doesn't necessarily have to be a casserole, just something easy to throw together! I may get some mozzerella sticks and potato skins or something.

ETA: You could do a really nice job with a chili bar. Put out bowls of sour cream, chopped scallions, grated cheese and tortilla chips to top the chill with.
I make this, and my family loves it:
Brown 1.5 lbs ground beef with one chopped onion. (I sometimes like to add bacon, too.) Stir in about 1 cup of sour cream and 1-2 cups shredded cheese; cook until cheese is melted.
Spread in a greased casserole dish and then top with pizza crust (homemade or sometimes for ease I use the pilsbury stuff in the can).
Bake at 375 for about 15-20 minutes or until the crust is brown.
