Mmmm! Tofu nuggets even your child will eat!

I made DD the tofu nuggets that are from the Deceptively Delicious healthy cookbook for kids by Jessica Seinfeld. She loved them! And even funnier... DH and I finished the batch! Delish:)

The 1st time I made them, DD didn't want them, but she was picky about everything at that stage. She's better now, that we figured out that my MIL was giving her tons of milk so she wasn't hungry for dinner.

Anyhow, here's a PIP (served with cream corn, battered in green bean puree and whole wheat bread crumbs/cooked with evoo and a lil too much bbq sauce for dipping;) LOL! We all loved this recipe!

    Not vegetarian, we just eat any and everything. Tofu is sooo good for you;) DH is part Indonesian and he was raised on tofu... so when we got married, I learned that it's totally not bad if you know how to prepare it. Anyhow, DD loved these! And quite honestly, they are just easier to make than homemade chicken nuggets. I promise, you might not gag on these;)

  • I've actually had tofu nuggets at a dim sum place and EVERYONE gobbled them up because the tofu sort of melted and they were really delish. I'd forgotten about them, but might have to try making them sometime.
  • This has been at the top of my must make list for a while now. I keep tofu in my fridge at all times. I love it. Thanks for the review! I'll make it this week. Perhaps I can get my husband to eat them too! Jack always eats my tofu out of all of my dishes.

    I would use a little more salt than the recipe calls for... and I would mix it into the breadcrumbs before you coat the tofu. Otherwise it just tastes too plain. GL!
