Cooked prosciutto is okay, right??
I've got a list all ready to go to the farmer's market when DD wakes up from her nap - it's DH's birthday so I was going to make him fettuccine with a prosciutto and cream sauce for dinner. The I remembered that cured meats are a no-no. But that's because of the Listeriosis risk, right? So, if the recipe says to brown on both sides in the pan before adding the cream, that would take care of that, right?

yeah if it's cooked it's fine - prosciutto is normally raw so it's more a toxo issue than a listeria one.
of course i totally ate serrano ham this weekend (which, like prosciutto is raw) and didn't even think about it. oops!
