What dinner to make?

We have something coming up where we will be having 6 unknown guests over. ?What would you make as a main course?

Preferably not too expensive and goes nicely with sweet potatoes.?

I'd probably make a pork or beef roast.  We got an excellent chuck roast and followed pioneer woman's recipe here for it.  It was only $9 or something but AMAZING!

Spinach lasagna is my go-to dinner for company, but you could do a meat lasagna too...

Stuffed with sundried tomatoes and mozzerella cheese

or stuffed with spinach, artichoke, and cheddar cheese

sauteed brussel sprouts or other green veg like green beans with browned butter

mashed sweet potatos

potato (or other type) dinner rolls

Dessert - apple dumplings or something pumpkin with vanilla ice cream

My fave is out of one of our cookbooks at home. Mmmmm....  I forget which one, but it's a standard.  If you want, I can e-mail it to you later tonight.  We have one for spinach & (ugg - which one) cheese and one for apples and cream cheese.  My favorite is the spinach with the cheese whose name I cannot remember.  mmmmm....
