I have adapted my fluffy banana cake to a fluffy (hold me) pumpkin cake.

Not at all!

Here's the one for the Banana cake

Sift:

2C flour, 1/2 tsp each: Baking powder, baking soda and salt

Beat: 1/2 C crisco, 1 1/2 C sugar, 2 large eggs, 1 tsp vanilla, 1/4 C sour milk (just add some lemon juice to it, about 1 tsp), 1 C smashed bananas.

Alternate mixing the 2 and bake in a WELL greased/ floured bunt pan for 1 hr at 350

 

To change this into Pumpkin cake: Add one gerous tsp of pumpkin pie spice and sub 1 healthy cup of puree pumpkin for the banana. Bake the same.
