Ive made squash for years but never made acorn squash...how long to cook, and what to do with it other than brown sugar (I dont have any on hand and dont feel like going to the store)? If it helps we are having pork chops and cabbage....
I made some for DD last winter, recipe off wholesomebabyfood.com
I want to say it was 45 minutes in the oven (400 maybe?) in a dish with a 1/2 inch of water on the bottom. I think... I would maybe mash it w/ brown sugar and butter. That sounds good
ETA: I looked it up because now I want some!
1. Cut acorn or butternut squash in half, scoop out seeds
2. Place halves face down in a pan and cover with an inch of water
3. Bake in a 400 degree oven for 40 minutes to 1 hour - be sure the
?shell/skin? puckers and halves feel soft then scoop squash ?meat? out
of the shell

so this, then slip them over, add butter, brown sugar, salt and pepper, and stick back in the oven on broil (450) for another five minutes. yum! acorn squash is one of my favorite sides!!

This is what I do. If you want to try something different, cook it like this and then toss the "meat" with Saigon cinnamon, brown sugar & butter. Then use it like a dip with apple slices. SO good.

I'll poke holes in the squash with a fork all over it and stick it on a plate in the microwave for 30 minutes.
It'll be tender on the outside when done.
Slice it in half and scoop out the seeds only.
Drench in butter and if you don't have brown sugar, try a combination of cinnamon and nutmeg.
It'll smell like Thanksgiving. :-)
