I found a recipe for Chocolate Chip Pumpkin Cookies. I really want to try this one but it calls for 1 cup of vegetable oil. Of course I don't want to use that much. What can i substitute? I like moist cookies but I don't know enough about baking to try anything. TIA!
Re: Cooking substitution question...?
Yeah, that's a lot of oil! I would probably try 1 cup applesauce, yogurt (plain, but vanilla would work too), or mashed bananas.
If you're worried about them not turning out, maybe half or quarter the recipe and do a trial run with the substitutions.
So would I just use a cup of applesauce?
ETA: And would I use the unsweetened kind since the recipe calls for sugar already? TIA
Yes, I would use unsweetened.
