Anyone here have any good gluten-free recipes? We're having friends over on Friday and one of them can't have wheat gluten. I want to make sure I don't accidently make some he can't eat. TIA!
i got a few on my blog. my cousin is gluten free. i have a chocolate mouse receipe on there and a chicken balsamic recipe (just La Choy Soy Sauce its gluten free)
this is one for the best PB cookies ever! its not on my blog yet but they are amazing
One cup creamy peanut butter One cup white sugar One teaspoon baking powder One egg
mix it all together. roll into little balls. roll in sugar then lightly press with a fork to get the indentations on top
Panna Cotta is also gluten free and you can make it the night before.

My BFF is celiac. Pretty much anything that doesn't use flour or pasta is fine.
Mexican is a good option as they can have CORN tortillas. Just check the seasoning packets to make sure there isn't any gluten. I'm pretty sure Old Elpaso is gluten free.
steaks/chicken etc are all fine.
Home made mashed potatoes and salad are fine (just check the dressings.

Beans and greens.
Cook kale (1/2 pound uncooked/person or so) in a wok with garlic and EVOO.
Mash up white beans (navy, Roman) and add some lemon juice and red pepper--warm on stove.
Serve beans on greens. It's so good.
