Yay! Dande, are you still here?

I have a baking question for you. ?Do you know (or do you know of any websites that can help) what the best flours are for baking/cooking that are NOT wheat flours? ?I really like the Ener-g dinner rolls, but they are $$$. ?I also tried making gnocchi with brown rice flour and it was HORRIBLE.

    The forums on celiac.com are where I learn everything.? A mix of flours is your best bet.? I like sorgum, white rice four, potato flour, and tef.??

    I've never made gnocchi but I've tried making gluten-free spatzle (German noodle/dumplings) and it is never very good!??

    For a lot of baking things, I use the Pamela's baking mix (it is good for pancakes, waffles, muffins, and stuff like that).? ?

  • I think Pamela's is what I found at whole foods and was SO excited to be able to eat pancakes again, but looked and there is almond in there, which I'm also allergic to. ?Thanks for the celiac.com site. ?I'll have to do some reading!
