Making zucchini bread - a question

the recipe calls for 2 loaves, and I only have one loaf pan, I was thinking of just freezing the batter.  Or would it work better if I make it and freeze the bread itself?

I would freeze the bread itself. I've never froze batter, but everytime I freeze a load it comes out well.

I'd make muffins out of the rest of it & just watch the cooking time, maybe stick a cookie sheet directly under the muffin pan so the bottoms don't burn.

I always make the 2nd loaf and then freeze in 2 halves, although I really like the muffin idea!

I would freeze the loaf.  Or make muffins and cook them for about 1/2 the time as a loaf

Ditto on the muffins.  Mine usually take about 35 mins to bake. :-)
