the recipe calls for 2 loaves, and I only have one loaf pan, I was thinking of just freezing the batter. Or would it work better if I make it and freeze the bread itself?

I'd make muffins out of the rest of it & just watch the cooking time, maybe stick a cookie sheet directly under the muffin pan so the bottoms don't burn.
Ditto on the muffins. Mine usually take about 35 mins to bake. :-)
