I've been trying to decide what to bring to the Jets game on Sunday and l decided to just bring cupcakes. I want to bring 2 kinds though and while I know I one of them will be chocolate cupcakes with a bailey's frosting, I can't decide what kind to make the others. Any ideas?

Re: cupcake ideas?
Funfetti with rainbow chip frosting....
That is sad it is my favorite but it brings a smile to my face with all of those colors.

vanilla/or lemon cupcakes with maybe....a limey/citrus frosting? with candied lime zest?
are you going with the green/white theme or just cupcakes in general?
I did banana with a chocolate ganache a few months back, and they were a huge hit.
I was just thinking the same thing
I like these...
Looks like Red velvet is on a lot of peoples minds!
me too! They are my favorite and I just made them 2 nights ago
they always make me smile!
How about carrot cake?
Ugh, I'm jealous.
My BFF calls and tells me she made some last night, but frosting with confetti frosting ::shakes head:: Not the same.

Maybe vanilla with a cream cheese icing and you could use food coloring in the cup mix to make make them green & white.
Oh yum!!
Vanilla or lemon with raspberry buttercream frosting
If you want the recipe for the rasp buttercream I can type it up when I get home. Let me know
wrangler - I can't see the pic
thanks girls, I'm willing to do a red velvet with cc I'm just worried about the cc frosting sitting out all day (it's supposed to be a nice day here on Sunday) The lemon/lime idea is sounding really good, I love citrusy stuff.
I so could go for a cupcake now. There is a posh cupcake bakery near me, and my favorite one is lemon, it has a light raspberry cream filling and lemon icing. Heavenly.
P.S. Nova my cat (the white one) is named after Chad Pennington.
alright, I'm sold. vanilla with raspberry buttercream sounds soooo good. If you could send me the recipe I'd appreciate it.
Thanks!
Ok, I'm heading out now. I'll sign on when I get home and send it to you.
Ttys ladies!
mmm, that sounds good too.
lol! what made you name your cat after Chad Pennington?
If you already want to do chocolate with bailey's frosting you can go out and make Irish Car Bomb cupcakes, Chocolate guiness cupcakes with baileys and irish cream frosting :oD here's the recipe, I made them for St. Patricks day and brought them to work, they were a HUGE hit! I saved some for home too and DH still brags about them to all his xbox live buddies haha.
Irish Car Bomb Cupcakes
Cupcake Ingredients
1 cup Guiness
1 stick, plus 1 tbs unsalted butter
3/4 cup unsweetened cocoa
2 cups dark brown sugar
3/4 cup sour cream
2 eggs
1 tbs vanilla extract
2 cups flour
2 1/2 tsp baking soda
Cupcake Directions
1. Preheat the oven to 350; line a muffin tin with cupcake liners.
2. Combine the Guiness and the butter, chopped into 1-inch chunks, in a large sauce pan, and heat to melt the butter.
3. Remove from heat, and whisk in the cocoa and sugar.
4. In a bowl, whisk the sour cream and the eggs and vanilla, then add to the beer mixture.
5. Sift together the flour and baking soda, and fold in the batter.
6. Pour into muffin molds and bake or 25 minutes, or until inserted cake tester comes out clean. Let stand 10 minutes, remove from muffin tin, and cool completely on a rack.
Frosting Ingredients
1 stick of unsalted butter, room temperature
3 cups confectioners' sugar
Bailey's Irish Cream
Jameson Irish Whiskey
Frosting Directions
1. Put the stick of room-temperature butter in a large mixing bowl and bet at medium-to0high speed for a few minutes.
2. Add a few short glugs of Bailey's and a tiny bit of Jameson, and mix at low speed.
3. Gradually spoon confectioners' sugar into the bowl, mixing on low speed.
I got him in 2003, when the Jets were still huge and I think that was the year they crushed the Colts in the playoffs. Pennington was a big deal that year, and when I got the kitten, he was this little white, blue-eyed kitten. Since Chad is a blond, blue-eyed quarterback it seemed to fit!
oooo, that sounds good. how strong of a Guiness flavor does it have?
Not too strong...I hate beer for the most part but it really just gave it a nice maltiness to it and just a slightly different that plain chocolate cake flavor. It's only one cup so it really wasn't much
now the frosting... haha you *really* taste the baileys in that and a hint of jameson... cause it doesn't get cooked out hehe.
