CASSEROLE AND SOUP RECIPES

I've been cleaning the house and going through the pantry, only to realize that we have no food! Anyone have any good casserole recipes or any recipes that you just love, and wouldn't mind sharing?

Re: CASSEROLE AND SOUP RECIPES

  • My favorite is my Chicken and rice casserole

1 can of cream of mushroom

1 box of Uncle Bens seasoned rice

    Chicken

Mix everything together with water- just make sure you don't put too much water in it. Cover with foil and cook for 45-50 minutes at 350 degrees

  • Someone on my local board posted this link to freezer meals today.  I haven't done any of them, but there are casseroles.

I make a similar dish, but I also add one can cream of chicken soup and one packet of dry onion soup mix.  It's a recipe I got from my mom and she calls it "Chicken Tremendous."  :)

  • Chicken Casserole:

4 chix breasts-baked for 1 hour in advance 1 box stuffing 2 cans cream of chix soup 1 small can carrots 1 cup cheddar cheese (optional) 3/4 stick of butter or margarine 1 cup milk

Preheat oven to 350. After cooking chix breasts for 1 hour, pull apart or cut into chunks. Mix milk, both cans soup. Add more milk to get desired consitancy, soup should be soupy but not thin/runny. Add chunked chix, carrots, and cheese. Melt butter in mirowave, add 1/2 cup water and stuffing mix. Let fluff. Pour Chix mix into 9 by 13 in pan.  Top with suffing mixture. Cover and cook for 30-45 min or until heated through.

  • This is my favorite soup

     Southwest Soup

1 lb of ground beef (it calls for 2lbs. but 1 is plenty for me)

    Half of an onion, chopped

    2 packets of taco seasoning

2 packets of ranch dressing powder (Hidden Valley)

2 cans of white shoepeg corn, drained

    1 can of black beans

    1 can of kidney beans

    1 can of whole tomatoes

1 can of diced chiles (I just use a can of rotels and you can make it spicy if you want)

    2 cups of water

Cook the beef and onions.  Drain the grease and add to the rest of the ingredients in a large pot.  Simmer for 2 hours (or less if you're real hungry!).

I like to eat mine with a little sour cream and dip a warm tortilla in it.  You can also add cheese if you like.

  • tator tot hot dish

brown hamb, add a can or two of green beans, a can of cheese soup, mix together sprinkle the top w/ tator tots and bake 35 minutes super easy and super good
