Ha ha, I'm eating meatloaf right now leftover from last night. Another vote for mashed potato and corn.
I have the best recipe for meatloaf btw:
1 pkg of ground turkey 1 pkg of ground sausage 1 pkg of dry onion soup 1 piece of toasted bread crumbled 1 egg minced garlic (we buy it in a jar and put a couple of spoons full) barbecue sauce (a couple tablespoons, not quite a 1/4 cup) ketchup (squirt until it looks good)
mix everything and then put in a loaf pan or brownie pan if you prefer. squirt some ketchup on top. cook for 40 mins on 375 degrees.
I also added some bacon on top this time and that was even more delish!
Green beans and Sister Schubert's wheat rolls tonight (or tomorrow)... but usually green bean casserole and mashed potatoes. Well crap- now I want green bean casserole instead of crock pot green beans... Hmmm... decisions decisions!
I would also consider broccoli with sweet potato fries... yum!

Thank a lot!!! Now, not only am I making DH stop for meatloaf ingredients on his way home, but also for now wanting unhealthy green bean casserole ingredients as well.
Yup, those are it! They are delicious and can be modified using whatever tomatoes you have, seasoned saly, different herbs. We've tried all different ways and LOVED them every time. And for future reference, DS will gobble up ANYTHING with these potatoes. We just mix in some meat, put a little ketchup on top and let him go to town. ;P
Usually a salad with fresh vinaigrette and either mashed potatoes (with buttermilk if I have it) or roasted potatoes with shallots and garlic. Sometimes sweet corn in the summer...

Peas might be acceptable, but only in a separate bowl so they don't get gravy on them.
