I slide the bumper up the rails so I can wiggle the mattress out to change the sheet. It's a PITA and the reason why I never used a bumper with DS.

i just slide the bumper up a bit and pull one corner of the mattress up enough to get the sheet on. then i go around and try to get the other corners on. it ends up scratching the heck out of my hands and hurts, but i'll be damned if i'm taking that thing off every time i change the sheet!
I don't I just raise the bumper and then push the mattress back down when I'm done. Pull the bumper up (usually it gets smooshed by the mattress) and it's done. It's easier when the crib is lower for me at least.
I untie half of the bumper (2 sides) and drape it over the other side of the crib. That gives me enough space to get the mattress out. But, yes, I find this job to be a total PITA!!!
I have 5 layers of sheets and peepee pads so I just pull one off if she has a mess on the top layer... I'll be mad when I get to the bottom, but I ASSume it will take a while to get there.
