we just decided to do this post- to help the other ladies start planning menus to assist with grocery shopping and preparation.

PS- I make my own spaghetti sauce, this helps save money since we go thru so much of it, if anyone's interested. I make a huge batch then freeze it. I take it out of the freezer for spaghetti (I also make and freeze meatballs), chicken parm, baked ziti, lasagna, etc.
Sunday: Spaghetti at the ILs
Monday: Cabbage Beef Casserole(basically unstuffed cabbage)/Corn/Salad
Tuesday: Grilled Pork Chops/Baked Sweet Potato/Salad
Wednesday: Chicken Nuggets/French Fries/Fruit Salad
Thursday: Grilled Rib Eyes/Mashed Potatoes/Veggies
Friday: Hot Dogs/Baked Beans/ Pasta Salad/Chips
Recipes, please! Also your spaghetti sauce recipe.
I want the pie and sauce recipes too please.... we use spag sauce sometimes twice a week and it's expensive....
tonight is left over teriyki chicken

tuesday is tacos
wed and thursday will be left overs or sandwichs because I am in class.
Friday will be pizza, and haven't thought about the weekend yet
Stacy- I just freeze it in 2 large tupperwear containers in the freezer, works pretty good!

Sunday-- Is Farmer's Market day and I usually get fresh sushi grade Ahi, strawberries and salad makings and make a seared Ahi salad with strawberries, cucumber and avocado with garlic bread all from the local Farmer's Market-very inexpensive, easy and fresh!
Monday- Barilla Whole Grain Penne with Zucchini, mushrooms, cherry tomatoes and Parmesan (for DH I buy one italian sausage at the meat counter and add it to his pasta-I'm trying to diet...lol)
Tuesday- Shrimp Rockefeller over white rice w/salad
Wednesday-Usually Shake N Bake pork chops, scalloped potaoes and corn on the cob.
Since it's so hot, I'm trying to not use the over so much and grill instead, so it will most likely be grilled marinated pork chops.
Thursday- Easy Cheesy Chicken Bake (in the crock pot) with green beans .
(I usually do one or two crock pot meals a week, try to make a double batch and freeze half for another week)
Friday- Salmon (or whatever fish is on sale) wild rice and asparagus.
Saturday--Slow cooker BBQ Pork and do sandwiches with baked beans & corn or potato salad--
Also try to do a ton of this and freeze for a lazy night later.

Ok, my hamburger pie recipe is really simple. You just brown and drain a pound of ground beef then stir in green beans and 2 cans of tomato soup until bubbly and serve over mashed potatoes. I think my mom sprinkles some paprika on the potatoes when she makes this. It's REALLY easy and DH loves it.
The chicken pot pie is about 3 chicken breasts cut into chunks and cook. (I boil them in water). Then you have veggies, I do broccoli, corn and carrots. My MIL just uses a bag of the frozen veggies uncooked but I don't like when they turn out crunchy so I cook my carrots and broccoli before throwing them in. Mix the chicken, veggies and 2 cans of cream of chicken soup in a pie pan and top with bisquick mixture (1 1/2 cups bisquick and 3/4 cup of milk). Bake at 350 for 30-45 mins until toothpick comes out of top clean!
My spaghetti sauce is more complicated but it's my pride and joy (haha) and I love making it. Every Italian woman should be able to do this! (I am only 1/8th italian but it still counts, haha.
First I chop about 4-5 garlic cloves and put in hot oil in the bottom of a big stock pot (not too hot or garlic with burn) then add 2 hot italian sausage links cut into thirds and a big onion chopped and sautee for a few mins. Then I add 2 cans (the big 14oz cans) of tomato sauce, 2 cans of crushed tomatoes and 2 cans of tomato paste. I also add maybe half a small jar of prego for added taste. Then fill the 2 cans of paste (they are very small) with water and add that much water.
Then all the spices...I add as much as I want to taste!! Oregano, basil, parsley, onion salt, galic powder, garlic salt, parm cheese, salt and pepper and sometimes a pinch of sugar if sauce has any bitterness.
They longer you let this sit on the stove the better it seems to taste. I love to have a big pot going for hours, it makes the house smell great. I freeze this and when I take some out of the freezer I try to let it sit on the stove and simmer for awhile again, it just makes it taste better! I also make my own meatballs with the sauce and cook them right in the sauce when it's simmering!

I am going to bake some more breakfast bars for DS and myself this week too. They came out so good last time! I also need to make and freeze some little lunch meals for him too today (he is with his Nana so I have some time to myself today).
I don't cook every night, but here's what I'll be making this week:

Crockpot Chicken-
Take a whole chicken and put it in your crockpot. Add variety of veggies (I normally do onions, potatoes, carrots, celery). Add spices that your family likes and a tiny bit of water. Cook on low for 6-8 hours depending on the size of the chicken. The longer it cooks, the more tender it becomes. I usually make biscuits or rice with it and salad. Super easy and really tasty. Looks pretty on a big serving platter too!

if you have too many eggs- have you thought of making (and letting your LO) try a breakfast casserole???
so easy.
you take the tubes of presliced rolls that you bake. put them in the bottom of a square casserole dish (9x9 works well) and you mix egg and shredded cheese, throw in whatever veggies and meat you have on hand- peppers, ham, mushroom, sausage whatever- and just bake it. the rolls soak the egg and cheese and it bakes all around it. sooooo yummy
I'm late as well...school started up again so I've been spending the weekend working on that.

All of the above is subject to change based on what I feel like eating that night or if I'm too tired from studying/internship to cook that night. We also have friends coming into town this Friday so we may end up eating out F-Sunday.

4 chicken breasts
1 6oz box Stove Top
1 10oz can 98% Reduced Fat Cream of Mushroom soup
1/2c water
1- Spray crock pot with non-stick cooking spray
2- Mix water, soup and stuffing mix in bottom of pot.
3-Lay chicken on top.
4- Cook low for 7 hours.

Sunday we had flautas with chicken, cheese and salsa.
Mon/Tues: chicken, mango chutney, bacon and white bean salad served each night on a bed of romaine lettuce
Wed/Thurs: sausage tortellini, one night served with red sauce and parmesan, the other with butter and kalamata olives. Salad side dish.
Friday/Sat: we always order pizza
