Brown Sugar (4 tsp), Chicken Breast (no skin, 12 ounces), Garlic (1 clove), Butter (salted, 2 tbsp), Salt (1 tsp), Black pepper (1 dash)
1. Melt the butter in a frying pan 2. Brown the garlic in the butter 3. Add chicken breasts to garlic and butter and cook, add salt and pepper. 4. When chicken is fully cooked add brown sugar on top of each breast 5. Allow the brown sugar to melt into the chicken
Quick and easy. Very good served with rice and veggies. DH is extremely picky and he loves this.
Parmesan Chicken(DH loves this and it's super easy)
2 teaspoons Dijon mustard
1 tablespoon extra-virgin olive oil
1/2 teaspoon chopped thyme
Four 6-ounce skinless, boneless chicken breast halves
Salt and freshly ground pepper
1/2 cup freshly grated Parmesan cheese (1 1/2 ounces)
Preheat the oven to 475?. In a small bowl, combine 2 teaspoons of the mustard with 2 teaspoons of the olive oil and the thyme. Pound the chicken until thin. Season the chicken breasts with salt and pepper, then brush them all over with the mustard mixture. Pat 2 tablespoons of the Parmesan all over each breast. Transfer the chicken breasts to a rimmed baking sheet. Bake the chicken on the top shelf of the oven for about 15 minutes, or until just cooked through and nicely browned.

Baked Stuffed Chicken (aka Bruschetta Stuffed Chicken). A favorite in our house.
Oh and grilled chicken marinaded in Italian dressing and soy sauce. Quick and easy, but so yummy. Even better left over and cold.
Chicken breast, cut in cubes and cooked in a pan on the stove
Jar of salsa - dump into the pan after chicken is cooked and let it heat up a bit
Top with mozzerella cheese and let that melt in the pan
Serve over tortilla chips
You can also add any veggies, like corn/beans you want to this dinner. I'd just put it in when you put the salsa in.
