For Carson's birthday this Friday (his actual bday is Sunday) I am taking in a treat for the kids in his class (2yr old room). I mentioned to the director bringing cupcakes as an example and she kind of gave me the side eye but said I could bring whatever I wanted. What are some yummy healthy dessert ideas I could bring for the kids in his class as a special treat? Oh, and it has to be easy, I am no cook, lol!

Rice krispy treats are easy and delish! You can put sprinkles in them to make them more exciting.
I think cupcakes would be a huge mess! How about cookies instead?
Could you bring in fruit popsicles? Don't even have to make those.
I know the daycare where I used to work would not let parents bring in treats that they had made themselves. But they were allowed to bring in something they could get at the store. That was a rule in place to protect the other children/teachers from parents possibly making someone sick. So if you haven't already, I would check on that.
But that said, we had some moms bring in cupcakes or even muffins for a birthday, and we would hide them until it was time to go outside after lunch and then we would eat them outside.
Smooshed sandwiches: roll flat some bread and then make it a sandwich. Sometimes I roll it up and cut slices off. My DS loves them, and they're healthy.
I put cream cheese & jam, or PB&J, or hummus on it. If he's been super good he gets nutella & peanut butter.
