I use to help him but it wasn't for OOT, it was for deployments and long trainings. This deployment I couldn't handle doing it with him. I was 13 weeks pregnant when he left and I knew he wouldn't be back until after she was born. When he was here for 2 weeks it was awful watching him pack up again.
When we go somewhere together (rare since he is never home) he will lay out what he wants and I usually pack it up but sometimes he will pack it himself.
I don't pack for him, but I do tell him what he needs to pack. Like this weekend we're going to our friend's beach house. So I emailed DH this morning and told him what he needs to remember to bring. But that's pretty much so I don't have to hear him whine when we get there and he realizes he forgot his bathing suit (or something else).
He will usually pick out his clothes and I pack them in the suitcase or what have you. I'm better at getting more in than he is. And since I'm always packing for the girls, it's just easier to pack everyone at once.
I honestly pack for him so I can pick the clothes he's going to wear. He has such nice clothes and he's always wearing the same jeans with holes and these old t-shirts. It's fine for work (he works in a warehouse), but I want him to wear his nice clothes sometimes too.

He packs for himself - which is why, on more than one occasion, we have made an emergency trip to Target to buy jeans or shirts. He has left before with only the shirt on his back, or a few pairs of shorts, but nothing to wear to church. He is much better these days, though!
I chose 'other'. I will pack for DH sometimes if he is busy at work and we need to leave as soon as he gets home. He usually tells me what he wants to bring, though. DH is a bit of a clothes horse, so I wouldn't dare take it upon myself to just pack his bag without any input from him.
Re: Clicky Poll: Do you pack for you SO when you go OOT?
Um, no. He packs for me.
ETA: Gah! I clicked the wrong one. Damned it.

We've done this too....only for me.
