AW Made my own granola bars

They are DELICIOUS!  I've been trying to incorporate wheat germ into my cooking and wanted to try it out so I researched some recipes and then made my own based on what I found.  I'm so excited to have another easy way to get a protein/carb boost after running.  I could seriously eat half a pan of these!  I guess that would defeat the purpose of running though.

  • I also plan on using the wheat germ this weekend when I make a double batch of Pumpkin Chocolate Chip Pancakes/Waffles.  I make a huge batch and then freeze them.  Then I pop them in the toaster as a quick, easy to eat while driving breakfast. You can substitute part of the flour in pretty much any recipe, just add a bit of water too.  

    Here's my Granola Bar recipe:

    Preheat the oven to 350 degrees.

    Gather your ingredients:

    • 2 cups oats
    • ?  cup wheat germ
    • ?  cup sunflower seeds
    • 1 cup peanuts, crushed
    • ?  cup brown sugar
    • ?  cup honey
    • ? cup applesauce
    • 1 tsp vanilla extract
    • ?  tsp Kosher salt
    • 1 cup total from whatever you like: dried fruit, almonds, mini chocolate chips, white chocolate chips, instant coffee (up to 2 tablespoons), coconut, peanut butter (1/4 cup), etc (any number of options)

     

    In a large bowl, mix together the dry ingredients well.  Add honey, applesauce, and vanilla.

     

    Pat the mixture evenly into a 9x13 pan lined with wax paper sprayed with nonstick cooking spray.

     

    Bake for 25 to 30 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 15 minutes then cut into bars while still warm.

  • that's the one i use only i use less honey and more brown sugar and no peanuts (i hate them) and raw almonds instead

  • The original recipe had 2 cups of flour (with no wheat germ) and oil instead of applesauce.  I haven't tried it with the wheat germ yet.  It may need a couple tablespoons of water because of the wheat germ.  This is my version to make it healthier:

    Pumpkin Chocolate Chip Waffles/Pancakes

     

    1 1/3 cups all-purpose flour

    2/3 cup wheat germ

    3 tablespoons brown sugar

    2 teaspoons baking powder

    1 teaspoon baking soda

    1 teaspoon ground allspice

    1 tablespoon ground cinnamon

    1/2 teaspoon ground ginger

    1/2 teaspoon salt

    1 1/2 cups milk

    1 cup pumpkin puree

    1 egg

    2 tablespoons applesauce

    1/3 cup chocolate chips

     

    1. In a separate bowl, mix together the milk, pumpkin, egg, and applesauce. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, chocolate chips, ginger, and salt, stir into the pumpkin mixture just enough to combine.
    2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each waffle or pancake.
