I'm making sugar cookies as favors for DD's birthday party and the frosting takes about 8 hours to dry. Since I'm putting them in little cello bags, they need to be completely dry for that. I'd like them to be done by the Fri before her party (which is on a Sat) so I think I'd need to make the cookies Wed in order for me to pull it off.
So they'd be 2-3 days old by the time the guest got them. Gross? Or is that ok??

I think this would be fine, just try and keep them in an airtight container and it would be ok.
I did sugar cookies for a baby shower once and made the dough the weekend before the party, froze it, put it in the 'fridge to thaw on Wednesday, made the cookies Thursday, frosted the (royal icing) on Friday, and they were perfect for the shower on Saturday.
I found the cookies soaked a lot of the moisture out of the frosting and they were REALLY soft and were still fresh tasting and good on Sunday. By Monday they were a little iffy.
