DD gets a pb&j sandwich basically every single day for lunch because it's the only thing I know she'll actually eat & is somewhat nutritious. She only just started eating more than a bite or two at each meal (and still doesn't usually eat dinner, just throws it on the floor), so I'm just glad she's eating, but I'd like to feed her a little more variety.
Any ideas? She can't have any milk products (milk allergy).

We usually alternate between cheese sandwiches, quesadillas, pb&j, chicken nuggets, Boca chick'n nuggets and veggie burger patties.
ETA: Tee milk allergy must make it hard for you. Almost everything DD eats has cheese in it. Maybe you could try some of the soy cheese and make a cheese sandwich or quesadilla.
Yeah, it does make it tough. Even the stupid veggie burgers & nuggets have milk in them :-( And DD usually won't eat grilled chicken - she just chews it & spits it out. If I had just 1 other thing to feed her that she would actually eat, I wouldn't feel so bad.
I've been giving DS whole wheat pasta with tomato sauce (usually just pureed tomatoes from a can with water mixed in) and then I mix in ground beef, bison, turkey or chicken. It's a good way to get some meat into him.
Also, he loves avocado which can also be yummy mixed with ground or diced meat.
I have another question - it seems like a lot of you give mushy-type things that you need to eat with a spoon. Do you feed DC? Because DD practically refuses to be fed, she wants to feed herself with the spoon, but a lot of stuff is still really hard for her to pick up & keep on the spoon all the way to her mouth.
Also, how do you get your DC to eat spaghetti? She STILL won't eat it :-( Well, actually, I made orzo last night & it was the first time she actually swallowed a few pieces, but every other kind (spaghetti cut up into pieces, rotini, elbows) have been a giant fail.
DS loves everything which is weird cause my oldest is so dang picky. So he eats basically what I eat. He loves chicken, or eggs, chicken nuggets, pasta noodles with or without spag sauce. Cooked Carrots and green beans, I haven't given him peanut butter yet but he loves plain bread or toast with a little butter. Rice is a favorite of his. Or I'll even make him soup like chicken noodle and drain it and he'll eat that. I could go on and on the kid loves his food so much.
