At home I don't make actual fries but I'll peel the sweet potatoes, cut them into cubes, toss them in extra virgin olive oil and sprinkle some brown sugar on top and I put them in the oven for about an hour (until soft) at 350. They're really good!
I hate cutting sweet potatoes because they are so hard; I have found it easier to cut them in rounds instead of strips and bake them that way. I leave them plain, or sprinkle them with cinnamon for ds or sometimes chili powder for us. They turn out fine w/o oil, but better with it.
I peel and cut the sweet potatoes into sticks. Spray them with Pam and put in the toaster oven at 400 degrees until soft about 15 - 20 min depending on how many are in there. Then I turn it onto broil to "toast" them and get them a little crispy. Watch carefully they burn quick. Take out and sprinkle sparingly with salt. YUM!
I cut and bake them like everyone else here. However, I toss them with italian dressing alone. Even DH, who hates sweet potatoes, likes the fries that way.

I make them all the time - soooo yummy!
I scrub the yams/sweet potatoes and cut them into fry shapes but leave the skins on.
Toss in olive oil & sprinkle with sea salt.
Put on a cookie sheet and bake at 400 for 20 min (turning once).
Delicious every time!
I also recommend the Alexia brand you can get frozen. Here's how I make em:
Peel and cut sweet potatoes into fries
Put in ziplock back with olive oil, salt, pepper and parmesan cheese (optional, but maybe 1/4 cup)
Bake at 375 on a cookie sheet for about 15 minutes
They are gooooooood!!!
